Santa Lucy's day is a very special celebration is central but especially in North of Europe: the feast of light, that will defeat the long nights and will make them shorter - it's exactly by these days that we have the longest night of the year, where according to some old mythologies, the evil spirits come to the earth to hurt people.
And on this night, people celebrate the celebration of light, when the duration of night starts to decrease, and the day starts to get longer and longer, bringing light and life again to the earth.
Ingredients:
- 3,5 cups of all purpose flour;
- 1 egg;
- 1/2 coffee spoon of yeast;
- 1/3 of softened butter;
- 1/2 cup of sugar;
- 2/3 cups of warm milk;
- 70g of dehydrated raisins;
- 4 tbsp. of brown sugar;
Preparation:
Cover the raisins with water.
Mix the flour with the yeast and 2 tbsp. of sugar. Add one egg, the rest of sugar and the softened butter.
Combine all the ingredients adding the milk at the end.
Work the dough in a table, making it into a ball.
Leave it to raise for 2 hours, in a bowl greased with olive oil.
Cover the ball of dough with a little more of olive oil. Cover the bowl with warm kitchen cloths.
After that, spread the dough in a table, giving it a rectangular shape. Spread some melted butter on it.
Cover the rectangle with the brown sugar and the raisins, spreading some cinnamon at the end. Roll the rectangle.
With a knife, start to cut from one side to almost the end of the other (leaving the end not cut).
Spread the two arms of the dough obtained, and start to make a braid with them.
Roll them in the form of a crown, and let it raise for another hour in the train where it will go to the oven (covered with parchment paper and greased with butter).
Cook it in medium-low oven for about 35 minutes (or until you see it's golden brown).
Let it cool down and sprinkle it with more cinnamon, or chocolate powder or powder sugar.
