If you're a brownies lover, but every bite you take, you think about the carbs you're consuming?
That will not be a problem anymore, if you try to bake these sweet potato brownies.
Ingredients:
- 2 cups of sweet potato cooked and smashed as a puree;
- 2 eggs;
- 1/2 cup of oat meal;
- 1/2 cup of cocoa powder;
- 4 tablespoons of vegetable oil;
- 1/2 cup of demerara sugar;
- 1/2 cup of chopped nuts (walnuts, cashew-nuts, or others if you prefer);
- 1/2 tablespoon of vanilla flavor;
- 1/2 tablespoon of baking soda;
Preparation:
In a bowl, mix first the sweet potatoes with the eggs. Add the remaining ingredients, one by one, mixing after each addition, leaving the baking soda for last.
Put it in a tray greased with vegetable oil and cacao powder.
Take it to the oven, for approximately 30 min.
After cooked, remove the brownie from the tray and cut into pieces!
